1. Preheat griddle to 400°F.
2. Put 1.5 cups of mix into a mixing bowl.
3. Add one egg, one tablespoon of oil and one cup of milk or water. Blend together using a wire whisk. Mix just until all dry ingredients are wet. Do not overmix.
4. Pour 1/4 cup (2 oz.) batter on griddle for each 4 inch pancake.
5. Bake on hot griddle for 2 minutes on first side. Turn and bake on second side for 2 minutes.

I saw a Tabitha Brown video rating Rosella Sweet Potato Pancake Mix and OMG!! she was not wrong. I was thrown by the 2 part mix, and 1 part water recipe, but that was easily remedied. If I used the milk recipe, OMG!, OMG! that would be heavenly.

I luv this pancake mix it’s the bomb.com. All you need is water and you’re good to go. They taste like a funnel cake to me & really don’t need any syrup. They only complaint I have is that one packet doesn’t last very long. But, I have no problem with reordering.lol

Good. These pancakes are GOOD. I love pancakes and these are super easy to make ~ 2 parts mix to 1 part water. I wanted easy, fast, and perfect and that’s what I got. And sweet potato!!!!!! I don’t even need syrup they are so good. Glad I went straight for the 3 pack.

Love love LOVE! They are light yet filling. Adding water prepares the perfect pancake. The milk and eggs makes them thick and “cakey” which is not my preference, but they taste great either way. I purchased the three pack and have been going through them quickly. I will DEFINITELY be buying again.
